Is it just as you get older that the days seem to grow shorter or is it that we are busier people? When we were young the days just seemed to drift by in a haze of wonderful play and endless days and bedtime exhaustion only seemed to get in the way of the next days' play. Now after a full on day we can't wait to get to bed and are falling asleep in front of the tv! I expect if we went to bed at 7pm and up at 7pm like we did as children then that is the answer - and no cooking, cleaning, housework, work etc.
Today is beautiful again and at 12.27 p.m. getting hotter. And I have already spoken to Deb, Megan, Jack and Mum on Skype (so good to speak to you all, Deb - hope you got to Ella and Kacey without Megan and Jack falling asleep and that your Mum had a good journey over to see you and Mum - hope you love the new car), made dinner for tonight and pickled some courgettes which is why I am now sat down with a coffee talking to the rest of you xx
HAPPY VALENTINES DAY to you all (....... and Happy Birthday to Paul for yesterday). Derek bought me a card but for the first time ever I didn't get him one, don't ask!! So making him a nice meal instead which he would prefer to a card with a nice bottle of wine anyway. There is a big rugby match on tomorrow in Queenstown at 6pm so maybe he will go to that too, lots of All Blacks playing, think it is a Hurricanes v Chiefs game for the start of the super rugby which means Autumn is definitely on its' way.
This recipe is a Jamie Oliver one and you just cut up the courgettes, half an onion and salt and cover in water for an hour. Then in a pan add 500ml cider vinegar, sugar, spices, chilli and heat until the sugar melts, let it cool then drain the courgettes, soak in the brine and bottle up. Usually when you make pickles the house smells for days but this method didn't ask you to boil it for ages so you are just preserving them really. You can eat them as is or drain and use in sauces which is just what I wanted and it keeps them crunchy too.
Anyway, so I am making a veggie pasta sauce for tonight and will make a cake and put peaches and apricots on top with cream, YUM! So Happy Valentines Derek xxx
Am also going to do some more exercise - I really really mean it this time - and have loaded a new APP on my phone to help so making a real effort (it beefs at me all the time to get up and move and am doing it so far). The walk we did on Saturday was nearly 5 miles and did 500 hundred step ups during the ad breaks last night but need to do much more if I am going to loose 14lbs by June. That's less than a pound a week so surely I ought to be able to do that. Encouragement required please!!
