Today we are having the en-suite done - we'll started - in our bedroom so I have an extra day off this week so time to do my blog. Photo below is a little grainy but you get the idea. Can't wait to have a nice clean and white loo and shower in there.
While talking to her I just had to nip out quickly to get my muffins out of the oven and it was only 9.30am, so up to speed this morning. Well we were up at 6.15 for Derek to go to work so not too bad really. It is a fail safe recipe I picked up from the Australian 'Better Homes and Gardens Show' - I get their magazine every month too and is very nice.
Into a bowl sift 350 grams self raising flour, 140 grams of castor sugar, 1 tsp baking power and half a spoon of salt - mix
In a measuring jug beat
one egg then add
150 ml vegetable oil (or similar)
200 ml milk-any type
If making sweet muffins add 1 tsp vanilla
carefully mix dry with wet ingredients until combined then add flavourings.
This morning I did finely chopped pieces of apple with cinnamon and sultanas and the 3 on the right are sun dried tomatoes from my garden and grated cheese with some fresh sage. The other day I did banana and walnut, chocolate chip and a few with nectarines. Don't overload them with 'bits'. I had enough mixture here for 8 of them but it is a big muffin tin. Cook at 190 degrees for 20-25 mins and hey presto! Yum................

Talking of weekends and the title of my blog, we went to the Races in Cromwell last Sunday, very hot and sunny, lovely picnic and out of the eight races we won three! We did some boxed tri-fectors or whatever you call them where you bet on three horses to come in anywhere in the first three places (cost minimum £1.50 which was our bet) each race and apart from one race, we had two placed in every race. As you can tell we are the last of the great betters so with £15 to get in to the 'meet' that cost us more than our bets and we won a fiver! Good fun though as usual and the atmosphere was lovely, not as many people as there was last time either but boy, was it hot!
Anyway next weekend is the A&P show in Wanaka again so we will meet up with Ross and Chris as it is going to be another nice day on the Saturday, we are actually believing the forecasts these days but after 6 weeks of no rain, who wouldn't! Gives me chance to stock up on a few plants at the Show too as there is a great stall there, well there was the last two times.
They are making some progress with our Residency Application now at least (our time is supposedly up in June although we were told by them the other day we can have a 3 years extension if we don't get it and no-one has ever told us that before!!!!!) and they just have to have sight of our last 9 months trading figures which Derek sent yesterday. So it all isn't as 'deadliney' as we originally thought now which is a good thing.
Anyway now it is lunch time, maybe I'll skip lunch after the muffin, and I might go out in the garden. Must hang the washing out anyway and get floors cleaned etc before the plumber comes and turns off the water.
